I found this recipe in one of my aunt Glenda's cook books, while I was in Florida over Spring Break in 2005. They used to have a Dolphin Inn Bed and Breakfast in Sea Side Florida where you could eat these waffles. Now the Inn is closed and you have to make them yourself. This is the best waffle recipe that I've tried.
3 egg yolks
3/4 cup of milk
1/2 cup melted margarine (cooled)
1 cup of sour cream
2 teaspoons vanilla
1 1/2 cups all purpose flour or white whole wheat flour
2 teaspoons of baking soda
1 tablespoon sugar
1/2 teaspoon salt
3 egg whites
Beat egg yolks, milk, margarine, sour cream, and vanilla in a mixer bowl until smooth. Add dry ingredients and sugar; mix well. Beat egg whites in mixer until stiff peaks form. Fold into batter. Spoon batter into waffle iron. Cook using the manufacturers directions. Serves 6.
