Mamma Mia (Pizza with Alfredo Sauce)

I am currently moving a lot of my recipes over to this blog. I don't have time to update two blogs. I don't know why I thought this was a good idea in the first place. So be patient with me as this blog may become recipe heavy for a little while.

Pizza's are one of the easiest dishes to make. My husband and I used to make them every Sunday when we got home from church. They are a fast way to get a meal on the table.

This recipe uses Alfredo sauce instead of tomato pizza sauce.

Making the crust:
3 cups of flour white or wheat
1 teaspoon of salt
2 tablespoons olive oil (optional)*
1 cup lukewarm water
1 package of instant yeast (0.25 oz, 7g)

Dissolve yeast into the water. Sift or stir flour and salt together then add water and oil and stir together until the batter is too stiff to stir. Then start kneading. Knead for about 5-10 minutes. If you have a stand up mixer or a food processor with a dough blade you can mix it in the mixer or food processor and skip the kneading part. Don't use a food processor if you don't have a dough blade and don't mix it for long even if you do have one because it will overwork the gluten. Then let rise on hour for a nice thick crust.
If you don't have an hour just go ahead and roll out your crust onto a Pizza Stone or pizza pan. Poke the crust all over with a fork.

Note on the oil: Sometimes I use 2 tablespoons of olive oil, sometimes I use 1/4 a cup. Authentic Italian pizza crust calls for no oil at all. That is right: fat free pizza crust!

  Making the sauce:
Although we often use store bought Alfredo sauce. It is nice to have a recipe on hand when we are out. This is adapted from Guy Fieri's Alfredo sauce. He uses heavy cream, but as you can see I use milk to lighten it up.

1 tablespoon extra-virgin olive oil
1 tablespoon minced garlic
2 tablespoons white wine
1 cup milk
1 tablespoon flour (for thickening)
1/4 cup grated Parmesan
Salt to taste

Saute garlic in olive oil. Add flour and mix until well blended (lumps should be from garlic not flour). Pour in wine. Add milk and Parmesan. Add salt to taste, you won't need much because Parmesan is a salty cheese.

Spread 1/2  cup of Alfredo sauce onto pizza crust. You can also use pesto, instead of Alfredo or tomato sauce.
Sprinkle shredded mozzarella to taste (you won't need much cheese because there is already so much Parmesan in the Alfredo sauce)

Add other toppings
Pepperoni (turkey kind)

Bell peppers, chopped
Banana peppers, chopped
olives, black or green
onions, chopped
artichoke hearts
oregano and basil, fresh or dried

Bake at 400 degrees F for 15-20 minutes. This makes one large pizza; you can divide into smaller pizza's if you want.
